I made these cakes for the first time today, and they are so moist and delicious that next time I think I’ll make them without the drizzly icing. The recipe is from Dave Myers and Si King’s The Hairy Dieters. The idea of the book is that by being careful with ingredients you can eat the food you’ve always enjoyed and still lose weight. Anyway, I think that even if you’re not on a diet this is a great recipe.


For the cakes

  • 200g self-raising flour
  • 1 tsp bicarbonate of soda
  • 75g caster sugar
  • 100g blueberries
  • finely grated zest of 1 lemon
  • 2 large eggs
  • 150ml low-fat yogurt
  • 2 tbsp skimmed milk
  • 50ml sunflower oil

For the icing

  • 100g icing sugar
  • 4 – 4 1/2 tsp lemon juice

The cakes

Set the oven to 200C.

Sieve the flour and bicarbonate of soda into a large bowl. Add the sugar, lemon zest and blueberries.

In a separate bowl, beat the eggs, and then the yogurt, milk and oil until well combined. Pour into the flour mixture and stir gently.

Pour into paper cake cases and bake for 16-18 minutes.

The icing

When the cakes have completely cooled, mix the lemon juice and icing sugar until smooth and runny. Drizzle over the cakes and leave to set.

MAKES 12, and at 167 calories per cake apparently.
