These are classic fairy cakes, decorated by an insistent three-year-old who is having a bit of a pink day.


For the cakes

  • 100g softened butter
  • 100g caster sugar
  • 2 eggs
  • 100g self-raising flour

For the icing

  • 80g softened butter
  • 160g icing sugar
  • a splash of vanilla
  • a few drops of pink food colouring
  • fairy dust (Sainsbury’s pink glimmer sugar)

The cakes

Set the oven to 180C.

Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating continuously.

Sieve the flour and fold into the other ingredients.

Spoon the mixture into cake cases.

Bake at 180C for 15 minutes.

The icing

When the cakes have cooled, beat the ingredients together until fluffy. Scoop out a circle from the top of each cake and cut each circle into two fairy wings. Spread the buttercream onto each cake and place the fairy wings on top. Decorate with fairy dust.
