This is what I make for myself when I just can’t be bothered to cook. There are just seven ingredients and the sauce can just be slammed in the oven whilst I have a sit down and a glass of wine.


  • 1 courgette (zucchini)
  • 6-7 baby tomatoes
  • 3 cloves garlic
  • a drizzle of olive oil
  • a sprinkle of rosemary (dried or fresh)
  • pasta or gnocchi
  • grated parmesan or strong cheddar

Put the vegetables in an oven-proof dish, drizzle the olive oil over them and roast in the oven for 25-30 minutes.

Serve with pasta, or for even speedier results – gnocchi. Sprinkle with parmesan, or strong cheddar.

I sometimes include red pepper (capsicum) in the roast.
