Sides

  • spring onions
  • mint
  • coriander leaves
  • lime
  • ground peanuts
  • Vietnamese dipping sauce

Noodles

  • two packs of soft noodles (Amoy)
  • bok choi – chopped
  • mirin
  • fish sauce
  • toasted sesame oil
  • tamari

Prawns

  • two packs of frozen king prawns
  • chilli flakes
  • chopped garlic
  • olive oil
  • salt

Preheat oven 200C.

Prepare the sides.

Put the prawns in a baking tray with chilli, salt and oil (cook for 10 minutes).

Cook the noodles – (2-3 minutes).

Put the chopped bok choi into the serving bowl. When the noodles are done throw them over the top and stir through so the bok choi wilts down. Add a splash of mirin, fish sauce, toasted sesame oil and tamari.

Pour the garlicy prawns over the noodles and stir through.

Add the sides as desired.

Hi, my name's Helen and I live in London with my husband and two children. I spend a lot of time in the kitchen, the extra twist is that I don't eat meat (I do eat fish though) and Jim, who loves meat, is always on a diet.
